El Tiramisú es un clásico y muy popular postre de la cocina italiana que ha traspasado sus fronteras exitosamente. Es un postre moderno, sencillo y delicioso.
Ingredientes para 4 personas:
Huevos 4 unidades
Azúcar 200 gramos
Mascarpone 400 gramos
Café expreso amargo 200 cl
Vainillas 8 unidades
Cacao amargo 15 gramos
Preparación:
Separar las yemas de las claras. Batir en un bol las claras firmes y las yemas en otro bol con el azúcar a baño maría hasta obtener una textura cremosa. Dejar enfriar y mezclar primero con el mascarpone y luego con las claras batidas.
En una fuente o vasos individuales alternar capas de crema con las vainillas mojadas en el café. Terminar con la crema. Meter en heladera por al menos 4 horas hasta que esté bien frio. Mejor si es de un día para el otro. Antes de servir espolvorear con cacao amargo.
Leonardo Fumarola es italiano, proveniente de Roma y nacido en la Puglia. Desembarcó en la Argentina donde tuvo su primer hijo y decidió hacer base y armar su propio restaurante con su mujer Nadia. Trabajó en las Islas Canarias, en Inglaterra y Rusia, fue cocinero de la brigada de Alfonso Iaccarino, uno de los mejores cocineros de Italia con tres estrellas Michelín. Es dueño y chef de L'adesso Ristorante.
